

Hola! I'm Carlos 👋 Born and raised in Lima, Peru, I moved to the United States with my family when I was 15.
Now, if I told you I’ve always been a huge fan of cooking Peruvian food… I’d be lying 😂 I was actually a certified law enforcement officer in Florida for years—worked at St. Augustine PD, spent a long time with JSO at the courthouse, and even patrolled the schools in Clay County.
So how did I even get into cooking?
I used to take my mom’s amazing Peruvian cooking for granted. I loved eating it, watching her in the kitchen, and hanging out with her… but I never actually cooked myself. Then in 2018, we lost her to pancreatic cancer. That’s when I realized I didn’t want our family’s love for the world’s 3rd best cuisine to disappear.
So I started experimenting—tweaking recipes, running with the flavors I remembered, and swapping hard-to-find ingredients with what I could get locally here in the U.S. My family has been my biggest cheerleaders (and taste testers!) and they love it.
